Greetings! I'm Madeleine, the baker, owner, creative director, dishwasher, and everything else at SALTY LARK PIES. I make each pie to order with my own hands. My menu changes monthly, inspired by the seasons and incorporating produce from local farms and occasionally my own garden.

I enjoy wandering through the farmers market, perusing the produce and imagining how flavors and textures will come together in a new recipe. From taking in the rich colors at the market to pressing cold slabs of butter into flour, the sizzle of onions hitting a hot pan, and oh so many lovely smells - berries releasing their juices as they bubble, buttery crust and cinnamon wafting from the oven, orange peel and cardamom steeping in hot cream - pie making is a feast for the senses in each step.
